Azalina's fresh Malaysian salad recipe
Chilies and roasted peanuts are a pantry staple in Malaysia. Variations on this salad are served all over the country. You can make this salad with just about any vegetable and meat or seafood.
1/3 cup thinly sliced green onions
1/4 cup slivered fresh coriander
1/4 cup slivered fresh mint
1/3 cup thinly sliced carrots
1/3 cup thinly sliced purple cabbage
1 small jicama, seeded and thinly sliced
1/3 cup sliced cucumber
1/4 cup sliced radishes
2 boiled quail eggs, halved
8oz Azalina's Peanut Sauce
Toss all the ingredients together (herbs, vegetables, and eggs) with Azalina's Peanut Sauce, and it is ready to serve. For vegan or vegetarian, omit the egg. Serves 4.
