Our cuisine is a reflection of my multicultural country, Malaysia. Three major ethnic groups are represented most strongly in Malaysian food. These are Malay, Chinese and Indian. With most dished deriving their shape and flavor from these three ethnic influences there is plenty of room for variation and discovery. One dish preparation can differ from state to state and valley to valley with different preparations and decoration while maintaining the same ingredients. The Island where I grew up, Penang is no exception. Penang's cuisine is multicultural and often sold at road-side stalls, known as hawker stands. Mamak people who are my tribe have had the most dramatic influence on the islands flavor. It's easy to find well over a hundred spices in the different methods of cooking there.
